Chocolate Date Balls: Enjoy a Treat While Keeping Up Your Health

Just finished a batch of Chocolate Date Balls.  Super easy to make, these treats are packed full of clean nutrition and micronutrients. Dates are high glycemic, so to lower the potential insulin spike, I added walnuts, flax seed, and Vega Whole Health Food Optimizer. These raw date balls are a great pre- or post- workout snack as well as a great alternative to having dessert and satisfying a sudden sweet craving.

Chocolate Date Energy Balls Recipe:

*1.5 to 2 cups dates

*1 cup raw walnuts

*1/4 cup ground flax seed

*couple scoops Vega Chocolate Whole  Health Food Optimizer

*heaping tablespoon raw cacao powder

*drizzle of unpasteurized honey (can also use agave syrup – not really needed especially if you wish to lower the glycemic level further)

*vanilla rooibos tea – add gradually to moisten and create smooth, binding texture

Simply place all ingredients (except honey and tea) in a food processor and blend until it reaches a fine crumbly texture.  Then add the honey and small splash of tea. Continue blending.  If needed, continue adding small amounts of tea until the mixture binds like a stiff dough.  Chill mixture in refrigerator for about an hour.  Then roll into 1.5 balls and coat with fine, unsweetened coconut. Store in the refrigerator in air tight container for up to a week.

You can play with the base of this mixture:

-add chai based spices or all-natural flavours like mint … healthy alternative as holiday treats

-add hemp seed, spirulina, and other super foods to crank up the micronutrients further

-you can blend less to keep a more crunchy texture or blend more until it reaches a smooth, truffle-like texture

-you can play with different raw nuts keeping in mind that blended almonds will add a distinct flavour where as most other nuts will remain mild … you may want to soak the nuts over night to improve the digestibility and overall nutritional impact
