Raw Kale Slaw Recipe

Every time I see kale in the garden or the store, I get excited.  Odd, yes, but excitement is good.  I love kale for all of its’ bountiful, anti-inflammatory benefits and that it is so easy to grow.  Kale has more nutritional value for fewer calories than almost any other food around making it nutrition-dense powerhouse.  It is packed with phytonutrients including glucosinolates which have been shown to lessen the occurrence of a wide variety of cancers, including breast, bladder and ovarian cancers. Sulforaphane, which is formed when cruciferous vegetables such as kale are chewed, triggers the liver to produce enzymes that detoxify cancer-causing chemicals, inhibits chemically-induced breast cancers and induces colon cancer cells to commit suicide.

Kale is also an excellent source of vitamin A, vitamin C, vitamin B6 and manganese, a very good source of dietary fiber, calcium, copper, and potassium.  What is also very exciting about kale is that it has the highest protein content of cultivated vegetables with 2.5 g of protein per cup.  For those making a transition to vegan-living, kale is a great food item to add to their diet to maintain adequate protein intake.

I got inspired today to make this side salad with raw kale.

Raw Kale Slaw Recipe:

Mix dressing in a large bowl

*1 tbsp of Vega Antioxidant EFA Oil Blend (or extra virgin oil olive)

*1 tsp Dijon mustard

*1 tsp of apple cider vinegar

*1 tsp unpasteurized honey

*1 tsp of nutritional yeast

*couple pinches of sea salt

*pinch of fresh ground black pepper

Toss into mixed dressing

*4-5 medium kale leaves (cut out stem and finely chop leaves)

*1/4 cup of sprouted mung beans

*1 tbsp of diced red onion

*1 tsp of raw sesame seeds (or hemp hearts)


*save the kale stems for mixing in a vitamix (smoothies or soups)

*sprout the mung beans at home – super easy and cost effective

*recipe makes about 2 side servings – double the recipe amounts and add quinoa and chick peas for full meal servings

  1. Kale is so versatile! We put it in smoothies, salads, it’s great on its own and my new favorite thing to make with it is kale chips. Such good stuff 🙂
